UK FOG compliance — a plain-English guide

Fats, oils and grease (FOG) are the leading cause of sewer blockages in the UK. Under Section 111 of the Water Industry Act 1991, food businesses must not discharge anything into the sewer that could damage it — and water companies expect a working grease management plan to be in place.

What you need

  • An appropriately sized grease trap or grease recovery unit on every kitchen waste line.
  • A scheduled cleaning and emptying contract with documented service records.
  • An EA (England & Wales), SEPA (Scotland) or NIEA (Northern Ireland) registered waste carrier collecting the FOG waste.
  • Used cooking oil collected separately by a licensed UCO collector.

Documentation auditors look for

  • Waste transfer notes for every collection
  • Service certificates showing trap depth and condition
  • Annual TR19 kitchen extract cleaning report
